Sheet Pan Cashew Chicken

I've been on a bit of an Asian kick recently. There is this "Volcano" chicken at a spot we like to order in from in our neighborhood that is so good but so filling and since the chicken is breaded, I'm sure it's not at all healthy. This is a healthier version I decided to whip up on a Monday night. I added some fresh minced ginger to the sauce that we could really taste hints of once cooked. I think the next time we make this, I'd add some sesame seeds before serving. Eat with chopsticks and it will feel like you ordered in without the guilt!

INGREDIENTS

SAUCE:

(6 T) Low Sodium Soy Sauce

(1 T) Hoisin Sauce

(1/2 T) Apple Cider Vinegar

(2 T) Honey

(1 T) Toasted Sesame Oil

(1/2 Tsp) Ginger, minced

(2) Garlic Cloves, minced

(2 T) Cornstarch

(1/2 C) Water

EVERYTHING ELSE *Prep all the chopping before start directions.

(1.5 Lbs) Boneless, Skinless Chicken Breasts, cut into chunks

(1 Head) Broccoli Florets

(1) Red Bell Pepper, cut into chunks 

(1) Green Bell Pepper, cut into chunks

(1/2 - 3/4 C) Roasted, Unsalted Cashews

Salt and Pepper, to taste

SERVES: 2-4

DIRECTIONS 

  1. Preheat oven to 400.

  2. Whisk all sauce ingredients together in a bowl.

  3. Heat a sauce pan or skillet on medium and pour sauce mixture in. After 30 seconds or so, bring it down to a simmer and continue to stir until the sauce thickens (about 2 minutes). Set aside.

  4. In a large plastic bag, throw in chicken, salt and pepper to taste and about half of the sauce mixture. Shake until chicken is covered with sauce.

  5. On a non-stick pan (or add aluminum foil for easy clean up), spread chicken and pop in the oven once preheated for about 8 minutes. 

  6. While chicken is cooking, put broccoli, peppers and cashews in a plastic bag with most of the remaining sauce and shake until covered with sauce. At this point, also put quinoa or rice on the stove and cook per their directions.

  7. After 8 minutes, pull chicken out and spread the vegetable / cashew mixture on the pan. 

  8. Pop back in the over for about 12 more minutes or until chicken is completely cooked through. 

  9. If there is any, once pan is out of the oven, sprinkle the rest of the sauce around the pan

  10. Serve over your grain of choice!
