Sheet-Pan Gnocchi with Veggies

This is a super easy dish, all you have to do is bake it after youโ€™ve chopped all your vegetables.

DIRECTIONS

  1. Preheat oven to 450.

  2. On a baking sheet, add chopped mushrooms and onions.

  3. Sprinkle with chopped rosemary.

  4. Add chopped squash, add Gnocchi

  5. Toss everything with EVOO

  6. Add sausage (make sure casing is removed and pull apart into bite size pieces.)

  7. Salt and pepper.

  8. Pop in oven for 25 min, taking out and tossing in between (at around 12 min).

  9. Turn on the broiler and allow Gnocchi to brown (3min or so)

  10. To serve, add shaved parm.

INGREDIENTS

(10oz)  Mushrooms, chopped

(1/2) Red onion, chopped into larger pieces

(2T) Fresh rosemary leaves, chopped

(1lb) Butternut squash, cubed (we buy pre cut)

(1lb) potato Gnochhi

(1/4C) EVOO

Salt / Pepper, to taste

(3 links) sweet Italian sausage, remove casing
